Sitting at elevations of \u003cspan class=\"s1\"\u003e1,800–2,000 MASL\u003c\/span\u003e, the farms benefit from rich red-brown soil, high rainfall, and steady temperatures that create ideal growing conditions for slow ripening cherries and layered flavour development.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe coffee is \u003cspan class=\"s1\"\u003eshade-grown\u003c\/span\u003e, allowing the fruit to mature gradually and develop greater sweetness and complexity. Harvest takes place from \u003cspan class=\"s1\"\u003emid-October through to late January\u003c\/span\u003e, with ripe cherries delivered directly to the local processing station.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eOnce received, the cherries are carefully \u003cspan class=\"s1\"\u003esun-dried on raised beds for 15–21 days\u003c\/span\u003e. This short resting period allows carbon dioxide to escape and the flavours to develop fully, resulting in a smoother, more balanced cup.
