ABOUT

Chiapas, located in southern Mexico near the Guatemalan border, is one of the country’s most important coffee-producing regions. The region’s high elevations, volcanic soil, and humid climate create ideal conditions for cultivating high-quality Arabica coffee. Known for producing coffees with sweet, chocolatey, and nutty profiles, Chiapas beans often exhibit a smooth body and subtle fruit notes, making them highly sought after in specialty coffee. Smallholder farmers in the region have been perfecting their craft for generations, combining traditional methods with sustainable practices to produce consistently exceptional coffee.

Grown at 1,400m in the lush highlands of Chiapas, Mexico, this coffee showcases the best of the region’s renowned specialty offerings. It features an aroma of dark toffee with a buttery smoothness, finishing with a hint of cacao nibs. A low-acidity profile and medium, round body make this a smooth, approachable coffee, perfect for any brewing method. Fully washed and sun-dried, this meticulous process enhances its clarity and depth of flavour.

This medium roasted coffee is great for brewing as espresso as well as all other common filter brewing methods. Our team likes to drink this one brewed with an Aeropress. Have a look at our brew guides for step by step instructions using an Aeropress.
