General pour-over guide for drippers such as V60, Chemex, or Kalita


Recipe for one cup (for multiple cups see below):

  • Coffee: 15 grams 
  • Water: 240 grams (1 small cup)

Step-by-Step Brew Guide

  • Boil Water: Heat your water to around 93°C. If you don’t have a thermometer, bring it to a boil and let it sit for about 30 seconds.
  • Measure Coffee: Weigh out your coffee beans. A general ratio is 1:16 coffee to water (e.g., 15g coffee to 240g water).
  • Grind Coffee: Grind your beans to a medium-coarse consistency, similar to sea salt.
  • Prepare Brewer: Place the coffee filter in the pour-over brewer. Rinse it with hot water to eliminate paper taste and preheat the brewer.
  • Add Coffee: Place the ground coffee into the filter, making sure it’s evenly distributed.
  • Bloom: Start your timer and pour just enough hot water (about twice the weight of the coffee, so 30g) to saturate the grounds. Let it bloom for 30-45 seconds. This releases CO2 for better extraction.
  • Pouring Technique: After blooming, slowly pour the remaining water in a circular motion, avoiding the edges of the filter. Pour in 3 even stages to control extraction:
    • First pour: Add water to about 100g
    • Second pour: Add water to about 170g
    • Third pour: Finish by topping up to 240g
  • Let it Drip: Allow the coffee to drip completely through the filter. This should take about 3-4 minutes total. If it’s too fast, try a finer grind; if too slow, try a coarser grind.
  • Serve and Enjoy: Remove the brewer, discard the filter and grounds. Pour your coffee into a mug, and enjoy!

 

Recipe for multiple cups:

For multiple cups just brew at a 1:16 ratio. A coffee brewing ratio refers to the proportion of coffee to water used during brewing. In this case, for every 1 gram of coffee, you would use 16 grams of water. For two small cups this could be 30g of coffee and 480g of hot water. The more coffee you use, the coarser you have to grind your beans to keep your drip time at 4 minutes or less. In terms of brewing follow the same steps as above. 

 

Aeropress brew guide for strong long black style coffee

 

Recipe for one cup:

  • Coffee: 25 grams 
  • Water: 250 grams (1 small cup)

Step-by-Step Brew Guide

  • Prepare the Aeropress: Assemble the Aeropress in the inverted position (the plunger on the bottom, chamber facing up). This prevents the coffee from dripping through until you’re ready to brew.
  • Grind Coffee: Grind your beans to a medium-fine consistency, slightly finer than your usual pour over grind.
  • Add Coffee: Measure and add your 25g of ground coffee to the Aeropress.
  • Add Water: Pour 50g of hot water over the coffee grounds. Use a stir stick or spoon to gently stir the coffee and water for about 10 seconds. This helps to ensure all the coffee is saturated.
  • Steep: Let the coffee steep for about 30 seconds
  • Add the remaining water: Pour the remaining 200g of hot water to your brew, ensuring it’s evenly distributed.
  • Attach Filter: Place a filter in the cap, rinse it with hot water, and screw the cap onto the Aeropress. Let the coffee steep for another 1:30mins. 
  • Flip and PressCarefully flip the Aeropress onto your mug and press down slowly and steadily. Aim for about 20-30 seconds to complete the pressing.
  • Enjoy: Once you’ve finished pressing, remove the Aeropress, stir the coffee, and enjoy!
