ABOUT

Blue Bianca is a beautifully expressive light roast from the highland plateau of Onang Ganjang, offering a refined take on what Sumatran coffee can be. Grown by small-holding farmers at elevation in the heart of Sumatra, this coffee balances depth and structure with surprising clarity.


Only fully ripe cherries are hand-picked before undergoing a meticulous, traditional wet-hulled process (Giling Basah). After pulping, the coffee is fermented for 12 hours, thoroughly washed, sun-dried, wet-hulled, and dried again. Each lot is then hand-sorted and rested for 30 days prior to export, allowing the flavours to stabilise and fully develop.


In the cup, expect a clean yet complex profile: soft earthy undertones layered with gentle sweetness, subtle spice, and a rounded mouthfeel that feels both comforting and elegant. Roasted light to highlight clarity and origin character, this coffee showcases a more delicate, nuanced expression of Sumatra while still retaining the region’s signature depth.


An excellent choice for filter brewing, where its structure and balance really shine, and a standout for those looking to explore a lighter, more refined side of Indonesian coffee.

 

Freshness & Resting

Our coffees are freshly roasted in small batches, but we recommend letting them rest for about 7–14 days after roasting before brewing. This short resting period allows carbon dioxide to escape and the flavours to develop fully, resulting in a smoother, more balanced cup. Freshly roasted beans can taste sharp or gassy, while rested coffee reveals its true sweetness and complexity.
