La Cima coffee is produced by the Cortez family in the Cajamarca region of Peru. Their farms are situated at altitudes ranging from 1,900 to 2,000 meters above sea level, providing ideal conditions for coffee cultivation. The farms are surrounded by pine and guama trees, which offer shade and help maintain cooler temperatures, allowing the cherries to mature slowly and develop higher sugar content.
The Cortez family cultivates Caturra and Bourbon coffee varieties and employs a washed processing method. During the harvest season, they provide employment to up to 80 local pickers, contributing to the community’s economic stability. The resulting coffee is noted for its clean and juicy profile, featuring flavours of grapefruit, pomegranate and brow sugar. La Cima coffee exemplifies the rich coffee culture of Cajamarca and reflects the Cortez family’s dedication to quality, sustainability, and community support.
La Cima is a vibrant and well-balanced filter roast, showcasing bright citrus and rich sweetness. With lively notes of lemon curd and blueberry, it delivers a refreshing fruitiness, while a smooth vanilla custard finish rounds out the cup. Roasted specifically for filter brewing, La Cima highlights the delicate complexities of its origin, making it perfect for pour-over, batch brew, or any method that brings out its nuanced flavours.
